Honey Glazed Carrots

Carrots are naturally sweet, so it may not make sense to add a sweetener like honey to a carrot recipe.  There is an understandable fear that adding honey would make this dish too sweet.  But if you try this recipe you may find that the added sweetener really does add something special to this dish. Ingredients: 1 pound carrots, peeled and chopped into sticks or rounds 1 ½ tablespoons butter 3-4 tablespoons honey, or to taste Salt to taste Optional: ¾ to 1 teaspoon commercial curry powder or garam masala You can cut the carrots either the long way to make short carrot sticks or you can cut them the short way to make carrot rounds.  First, boil or steam the carrots until they are almost fork-tender.  Then drain them and combine everything and sauté until the carrots are tender and become glazed over. This dish cools quickly, so make sure you serve it immediately!
