This recipe is the one my Mom got from the Bisquick box and for me it cannot be beat for being easy, quick and delicious.  There is nothing like hot shortcake and cool strawberries and whipped cream all together.  Each spring we take a Saturday and get our strawberries from a nearby pick your own farm and make the shortcake that night.  But this will work with any strawberries you can get. Ingredients: For the berries: 4 cups fresh strawberries, rinsed, stemmed and sliced ¼-½ cup sugar for the berries 1-2 tablespoons lemon juice to make the flavor sparkle For the shortcake: 3 tablespoons sugar 2 ⅓ cups Bisquick mix ½ cup milk 3 tablespoons butter or margarine, melted For the whipped cream 1 package frozen whipped topping, thawed - OR- Make 1 ½ cups of homemade whipped cream: ¾ - 1 cup heavy cream 2 tablespoons confection sugar – the cornstarch in that sugar will help it keep its shape for days ¼ - ½ teaspoon vanilla First, mix the strawberries, lemon juice and the sugar together and chill them for a couple of hours.  Stir them once or twice while they are chilling.  The sugar will react with the berries and create a little strawberry syrup to go with the berries. Mix all of the shortcake ingredients; the Bisquick, milk, 3 tablespoons sugar, butter or margarine together in a bowl until they are well combined.  Drop in about 5-7 servings all of this mix onto an ungreased cookie sheet and bake in a preheated 425 degree oven for 10-12 minutes until browned.  Your oven may be slightly hotter or colder than mine so monitor them carefully.  Also, a dark colored cookie sheet will brown them faster than a light colored cookie sheet. For the whipped cream, you may either thaw a frozen package of whipped topping from the supermarket or squirt it on with a can.  But if you want to go the distance…. Beat the heavy cream in a bowl that you have chilled in your refrigerator, confection sugar and vanilla pretty fast in a mix pretty fast in a mix until you get some fairly stiff peaks.  This will make about 1 ½ cups of the most delicious whipped cream you have ever tasted.  It is worth the trouble.  Serve the shortcake hot in a cereal bowl and top with the strawberries then the whipped cream.  I like to split the individual shortcakes so that the strawberry syrup will soak a little better into the shortcake.  This is good eating!
