Making this in a cast iron skillet makes for a great old-timey look. The batter rises nicely through the crushed berries for a great presentation. And we don’t add a lot of sugar to the berries to let their flavor shine through. For the fruit: 10 ounces fresh blueberries (about one pint – or peaches! …see Note) 2 teaspoons sugar 2-3 tablespoons lemon juice (bottled is okay) For the skillet: ½ cup (1 whole stick!) butter For the batter: ⅔ cup sugar (141 grams) for batter ½ teaspoon Kosher salt 1 cup (125 grams) all-purpose flour 1 ½ teaspoons baking powder ½ cup whole milk Vanilla ice cream or whipped cream for serving Preheat your oven to 350 degrees. Macerate the berries in the 2 teaspoons sugar and the 2-3 teaspoons of lemon juice while making the batter. And crush the berries just enough to release some more of their juices. Whisk together the dry ingredients for the batter then add the milk – this batter get pretty thick, but that’s okay. Melt that whole stick of butter on your stovetop in a 10 inch skillet at medium heat. Remove from heat and add the batter, spreading it as best you can over all of the skillet.  The melted butter will invade the edges and poke through some of the batter, pooling as you spread it. Ladle the berries and their juices over the batter, spreading it as well. Remember to remove any permanent skillet sleeve from the skillet handle before baking! Bake at 350 degrees for 45-50 minutes and watch how the batter rises right through the berries to render that cobbler look. Check for browning and pull out the skillet before being overdone.  Remember to use two potholders to remove that heavy skillet from the oven. Serve warm with ice cream or whipped cream! Note:  Try substituting 10 ounces of peeled and sliced ripened peaches.  Dip whole peaches in boiling water for 30 seconds, then immerse them in an ice water bath to arrest the cooking.  Let cool and peel and slice with ease! Macerate the peaches like the berries but don’t crush them.
